Hit Cap:

105 hit vs most targets
158 hit vs Draeni/Undead/BE (hit is currently broken with racials, but this is supposedly fixed in 3.0. Cool

158 hit is 6.02%.

There is really no point of going for the 105 hit. Most arenas you will be facing one for the classes that require the higher amount of hit.

Also, the 6% is not including the hit reduction that certain classes can spec into.

Hunters:
Minimum hit rating: 164 (5%) against most classes/specs
Maximum hit rating: 361 (11%) against a Night Elf Rogue with Heightened Senses"
